Denomination of Origin Controlled and Garanted

It comes from the vineyards of Poderi Boscarelli, located in Cervognano, and it is produced with selected grapes to obtain a wine with a good potential for ageing.

The most part of the grapes we use are Sangiovese 90%, Mammolo Canaiolo e Colorino. The harvest and the first selection are made by hand directly on the vines,the grapes are trasported in small crates to the cellar where are selected a second time.
6.000/6.500 kg of grapes per hectare.
Vinificazione
Without the stalk and after a soft pressing, the grapes ferment in little vats of oak or steel, filled up to no more than ¾ of their capacity. The fermentation lasts about a week at a temperature of 28 / 30 ° Celsius.
After the fermentation, the maceration goes on for at least 5/8 days.
Caratteristiche del terreno
The Boscarelli’s vineyards are planted on a calcareus soil of alluvial origin, sandy with a good percentage of lime and argil. The vines are between six and thirty years old, and are selected from clones of our own old vineyards.
Invecchiamento
The wine ages in casks of Slovenian oak or French Allier, whit a capacity of 350 to 2000lt. for almost 18/ 24 months..
A light filtration is carried out before bottling, if necessary.
